I am obsessed with all italian food and would probably eat pasta everyday if it wasn’t full of calories and bad carbs. So a while ago I switched to Doves Farm organic brown rice pasta and I am hooked.
It is incredible because it looks and tastes just like pasta but isn’t bad for you. The only ingredient is brown rice so it has a lot of health benefits as well; it is gluten and wheat free, high in fibre, full of antioxidants and keeps you fuller for longer because of its slow releasing sugar.
Not only do I love the pasta but I love the sauces that go with it, particularly the creamy dishes like carbonara and lasagne.
So I decided to try out a healthy version that would give me the same effect as a genuine italian dish to curb my naughty cravings, as well as being beneficial to my health.
In the sauce the avocado is full of good fats making your skin glow and helping to prevent visible signs of ageing as well as aiding weight loss and lowering cholesterol. The tomatoes are also full of antioxidants and vitamins A, C and E, which can help prevent certain types of cancers. The onion and garlic are full of vitamins and their compounds, allyl sulphide and bioflavonoids, can help fight infections and some cancers, boost your immune system and also reduce the risk of blood clots, therefore preventing heart attacks.
Ingredients (serves 1 person):
100g brown rice pasta
1 ripe avocado
5 baby plum tomatoes
The juice of 1/2 a lime
4 fresh basil leaves
1/2 tsp dried italian herbs
1/2 garlic clove (roughly chopped)
1/2 red onion (roughly chopped)
Salt & pepper
A pinch of chilli flakes (optional)
A couple of basil leave to garnish
Start by cooking the pasta in a pan of boiling water with a large pinch of salt. While the pasta is cooking you can get on with the avocado sauce.
In a small pan heat a tsp of olive oil and add the onion. Fry until soft, then add the garlic cooking for about a minute longer and making sure it doesn’t burn.
Once this is ready take it off the heat and pour it into the blender along with all the other ingredients and seasoning. Blend until the mixture is completely smooth.
Once the pasta is cooked drain the water and pop it back in the pan over a low heat. Add the avocado sauce and mix until all the pasta is covered and the sauce has heated through.
Pour onto a plate and garnish with a few basil leaves. Serve immediately
