Paleo Lemon Cookies

These little lemon cookies are perfect dipped in yogurt for breakfast, as a snack or as a dessert. They take 20 minutes to make (including baking time) and taste delicious.

They are also vegan (I have used chia seeds as an egg replacement), gluten-free and suitable for people following the paleo diet.

Ingredients:

100g Ground almonds

2x Tbsp Maple syrup

10g Chia Seeds

Zest of 1 lemon

Juice of 1/2 a lemon

1/4 Tsp Bicarbonate soda

Directions (Makes 6):

1) Turn your oven on to 180 (fan)

2) Pop all the ingredients into a small mixing bowl and  mix well until everything has blended

3) Cover a baking tray with baking paper and scoop 6 balls of the mix onto it pressing each down to make cookie shapes

4) Pop in the over and bake for 10-15 minutes
