Refreshing Nutritious Chicken Salad

This is such a nutritious salad that is great for the slightly warmer evenings as it’s very refreshing. The salad is carb free, low GI, gluten-free, high in protein and essential fats and full of vital vitamins and minerals. It also tastes delicious and is very light so you feel nicely full once you have finished it.

Ingredients: (Serves 2)

  • 2 x Cooked chicken breasts (shredded)
  • 2 x Large carrots (about 300g peeled and grated)
  • 2 x large handfuls of spinach (finely chopped)
  • 1/4 x Cucumber (finely chopped)
  • 1 x Celery stalk (finely chopped)
  • 40g x Cashew nuts (crushed)
  • 1 Inch x Fresh ginger (peeled and grated)
  • 1 x Avocado (chopped into small chunks)
  • Juice of 1 lime
  • 1 x Tsp garlic paste/puree
  • 4 x Tbsp Extra virgin olive oil
  • 1 x Tbsp balsamic vinegar (you will need a bit more to drizzle over at the end as well)
  • Generous amount of black pepper
  • Pinch of Himalayan salt

Directions:

1) Start by prepping all the ingredients. chopping, shredding etc

2) Put all the ingredients into a mixing bowl, EXCEPT the avocado. Mix well

3) Pour into a lovely serving dish and sprinkle the chopped avocado over the top and then drizzle over 1 more tbsp of balsamic vinegar.
