I can’t believe I only recently discovered roasted broccoli when I had dinner at a friend’s house…it is delicious. And so easy to make!
Here is how I recreated it in a few simple steps…
2 heads of Broccoli, chopped into mini heads
3 cloves of smashed Garlic
Herbs: thyme, rosemary and paprika
Put the broccoli in a roasting tin, sprinkle all the herbs over and pour over the olive oil. Throw in the garlic and mix it to make sure that the broccoli heads are covered evenly.
Roast for around 30 minutes at 200°C, mixing it occasionally to make sure it doesn’t burn.
I had mine as a part of a salad for lunch, with iceberg, green beans, cherry tomatoes, spring onions and a big dollop of hummus on the top!
