This is a really easy and delicious cake – it is also dairy-free, gluten-free and full of goodness. This is an adapted version for one I used to make Ian before he became gluten-free and he loves it!
- 3 x bananas
- 1 cup blueberries
- 125g gluten-free flour
- 100g coconut sugar
- 1 x egg
- 2/3 tsp bicarbonate of soda
- 1.5 tsp baking power
- 2/3 tsp vanilla extract
Heat the oven to 180°c and prepare a loaf tin with some baking paper (so that the cake is easy to remove at the end)
Mash the bananas and combine them with everything except the blueberries. Once it is really well combined, add 3/4 of the blueberries.
Pour the mixture into the loaf tin and scatter the remaining blueberries.
Cook for 45-50 minutes, leave to cool for 10 mins in the tin and then take out and place on a cooling rack.
