Easy Lunch Box Recipes

We tend to bring our lunches in at Squirrel HQ so have perfected the art of throwing things together which are really filling, tasty and keep you going throughout the day. Here are a few of my favourites which all make 2 portions and all just require mixing together in any order…and of course a lunchbox/tupperware to take it with you on the go…

Pesto quinoa with salmon

  • 1 pack of ready made quinoa (or cook 2 portions worth)
  • 2 tbsp pesto
  • 1 large fillet of salmon
  • 40g feta, broken up
  • 2 carrots, grated
  • cherry tomatoes
  • Sundried tomatoes, chopped up
  • Artichoke hearts, chopped up


Asian style wild rice with tofu

  • 140g Firm Tofu, chopped into small cubes (I used Tofoo)
  • ½ cup Rice (I used Wild rice) cooked according to instructions
  • ½ cup Edamame beans
  • 4 Spring onions, chopped
  • 3cm Ginger, grated
  • 1 clove Garlic, crushed
  • 2 tbsp Soya sauce
  • Juice of ½ lemon
  • 1 tbsp Sesame oil


Spiced chickpeas & sweet potato

*this recipe has slightly more prep involved – directions below*

  • 1 can chickpeas, drained
  • 2 tbsp curry spice mix (or 2 tsp cumin, 1 tsp ground coriander & ½ tsp chilli powder)
  • 100g cherry tomatoes
  • 1 clove garlic, crushed
  • ½ tsp olive oil
  • 2 large sweet potatos, chopped into chunks
  • 1 Red onion, sliced
  • 1 tbsp Tahini (optional)
  • Juice of ½ lemon

Steam the sweet potato for around 8-10 minutes. Meanwhile, heat the olive oil, then fry the spices. Add the onion and garlic and once they’ve softened (after about 5 minutes) add the chickpeas and cherry tomatoes. Once the sweet potato is ready add this and mix all together for a few more minutes. Drizzle the tahini over at the end.
