Little Squirrels: Mini Vegetable Pancakes

This recipe is adapted from our cookbook for the baby squirrel of the family. It is so easy, packs in all the right food groups and are perfect on their own or topped with nut butter or hummus. They are great for on the go too.


  • 1 handful of mixed nuts (just make sure they’re not salted)
  • 2 handfuls of spinach*
  • 1 handful of oats
  • 200g cottage cheese
  • 1 egg (or chia seed egg)
  • 1 heaped tbsp self-raising flour



  1. Grind up the nuts in a blender/food processor (we use a nutribullet style blender)
  2. Put everything else in and blend until it’s all combined
  3. Heat some oil or butter (we use coconut oil) in a pan and cook the pancakes in batches. Use about a heaped tablespoon of mixture for each


*If you have other veg or fruit that needs using then you can replace or add. I’ve used broccoli and blueberries in other batches*
