We really fancied some comfort food one weekend so I decided to try and make some healthy and gluten-free fish fingers….they were really easy to make, tasty, nice and light but also very satisfying! Perfect with some homemade chips, good quality tartar sauce and some peas.
Ingredients (serves 2)
- 250-400g white fish (I used Haddock)
- 4og almond flour
- zest of half a lemon
- 2 cloves of garlic, crushed
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp pink himalayan salt
- 1 small egg beaten
Pre-heat the oven to 180°C.
Cut the fish into rectangular chunks (or nuggets if you prefer!), then mix together the almond flour, lemon zest, salt, cayenne pepper and paprika in a small bowl.
Then set up your production line….take the fish chunks, dip them into the egg (ensure they are coated) then into the almond flour mix.
Then place each piece on a baking tray…
Then bake them for 15 minutes until they look like this:
Then serve them with a wedge of lemon, some healthy sweet potato or normal potato wedges… I used the Tefal Airfry to make these – they only use a very small amount of oil and take about 25 minutes to make, so good!
