This recipe has the crunch of a crust with the goodness of seeds baked in one tray for 20 minutes! The leek and spinach side is optional if you’re not as keen…
Ingredients (for 2 people)
- 2 salmon fillets
- 20g mixed seeds (can buy ready mixed bags cheaply in most supermarkets)
- 10g pine nuts
- 2 garlic cloves
- juice of half a lemon
- 2 peppers
- 1 onion
- 200g green beans
- 2 leeks (chopped up)
- 1 bag of spinach
- 3 tsp olive oil
- Salt and pepper
Put the oven on at 180°C fan.
Chop up the peppers, onion and green beans, put into a roasting tin mix well with 2 of the tsp olive oil, then season.
Using a food processor, blender or nutribullet, blitz the mixed seeds, garlic cloves, pine nuts and lemon so that it’s well combined and almost slightly like a paste.
Divide the seed mixture between the two salmon fillets and smooth over the top side and then place on top of or between the roasting tin (depending how much space you have!) and put into the oven.
Make sure you check on the veg whilst it’s cooking and give it a bit of a mix if you can.
After the salmon has been in the oven for about 10 minutes heat the remaining olive oil in a pan, then add the chopped leeks and keep stirring whilst they brown. After about 6-7 minutes add the spinach and turn the heat off, but keep staring the spinach through so that it wilts.
After the salmon has been in for about 20-25 minutes (depending on the thickness of your salmon fillets) it should be ready to serve!!
